These Indian-inspired tofu cutlets make a great appetizer or can be incorporated into a hearty meal. I like to prepare these using a full block of firm tofu, carrots, sweet potatoes, beans, and broccoli. They are very versatile, and you can experiment seasoning them with different flavors. You can also add steamed beetroot, to add a beautiful pink color to these patties.
Ingredients To Make These Tofu Patties
Vegetables - Use steamed potato, and sweet potato. We will also use carrot, French beans and broccoli for this recipe. You can also use beetroot and finely shredded zucchini to add more nutrition and color in this recipe.
Firm Tofu - You can use either firm or extra firm tofu for this recipe. Make sure you press the tofu to take out all the excess water.
Aromatics - I am using minced ginger, garlic and green chilies. You can also add finely chopped onions in this recipe.
Spices - Use Kashmiri red chili powder, turmeric, coriander - cumin powder, garam masala, dry mango powder (amchur) and salt to season these tofu veggie patties.
Breadcrumbs - I am using breadcrumbs to bind the patties, you can also use oat flour or roasted chickpea flour as a binding agent.
Avocado Oil - We will be shallow frying these tofu patties, in avocado oil.
Step - By - Step Recipe To Make Tofu Veggie Patties
Step 1: Prepare the Tofu Mixture
Press the Tofu: Wrap the tofu block in a clean kitchen towel and place a heavy object on it for 10-15 minutes to remove excess moisture.
Mix with Vegetables: Add carrots, chopped French beans, and broccoli in the food processor bow. Blitz until the veggies are finely cut.
Crumble the Tofu: Once pressed, crumble the tofu into a food processor. Blitz again until tofu is mixed well.
Combine The Ingredients: Now add boiled sweet potato and potato to the bowl. Mash them using a potato masher. Next add in the prepared tofu and veggie mix.
Add Aromatics and Spices: Next, add Kashmiri red chili powder, turmeric, coriander-cumin powder, garam masala, dry mango powder and salt. Also add minced ginger, garlic, and green chilies. Mix well.
Add Binding Agent: Stir in the breadcrumbs to help bind the mixture.
Combine Well: Mix everything thoroughly until it forms a cohesive dough-like consistency.
Step 2: Shape the Patties
Take a small portion of the mixture and shape it into a round or oval patty.
Repeat the process with the remaining mixture, ensuring uniform size and thickness.
