Equipment

Ingredients

  • 14 oz Firm Tofu
  • 1 Medium Sweet Potato
  • 1 Large Potato
  • 1 Large Carrot
  • 15 French Beans
  • 1 Cup Broccoli Florets
  • 1 Teaspoon Salt Add more if needed
  • 1.5 Teaspoons Kashmiri Red Chili Powder
  • 1.5 Teaspoons Coriander Cumin Powder
  • ½ Teaspoon Turmeric
  • 1.5 Teaspoons Garam Masala
  • 1.5 Teaspoons Dry Mango Powder
  • 2 Tablespoons Ginger Garlic Green Chilies Minced
  • ½ Cup Breadcrumbs Add more if needed
  • ¼ Cup Avocado Oil For Shallow Frying The Patties

Instructions

Step 1: Prepare the Tofu Mixture

  • Press the Tofu: Wrap the tofu block in a clean kitchen towel and place a heavy object on it for 10-15 minutes to remove excess moisture.
  • Mix with Vegetables: Add carrots, chopped French beans, and broccoli in the food processor bow. Blitz until the veggies are finely cut.
  • Crumble the Tofu: Once pressed, crumble the tofu into a food processor. Blitz again until tofu is mixed well.
  • Combine The Ingredients: Now add boiled sweet potato and potato to the bowl. Mash them using a potato masher. Next add in the prepared tofu and veggie mix.
  • Add Aromatics and Spices: Next, add Kashmiri red chili powder, turmeric, coriander-cumin powder, garam masala, dry mango powder and salt. Also add minced ginger, garlic, and green chilies. Mix well.
  • Add Binding Agent: Stir in the breadcrumbs to help bind the mixture.
  • Combine Well: Mix everything thoroughly until it forms a cohesive dough-like consistency.

Step 2: Shape The Patties

  • Take a small portion of the mixture and shape it into a round or oval patty.
  • Repeat the process with the remaining mixture, ensuring uniform size and thickness.

Step 3: Cook The Patties

  • Heat 4 tablespoons of oil in a non-stick pan or skillet over medium heat.
  • Place the patties in the pan and cook for 3-4 minutes on each side, or until golden brown and crisp.
  • Flip gently and cook until both sides are evenly browned.
  • Remove from heat and place them on a plate lined with a paper towel to absorb excess oil.

Step 4: Serving Suggestions

  • Serve the tofu patties hot with mint-coriander chutney, tamarind chutney, or a spiced yogurt dip.
  • You can also place them in burger buns with lettuce, tomato, and a dollop of chutney for an Indian-style tofu burger.
  • Enjoy as a side dish with a fresh salad for a wholesome meal.

Notes

  • Make it Gluten-Free: Use chickpea flour instead of breadcrumbs for binding.
  • Make it Spicier: Increase green chilies or add a dash of black pepper.
  • Add More Veggies: You can also try adding beetroot and zucchini to this recipe.
  • Cooking the Patties: After shaping the patties, cook the patties right away. The patties might start to sweat water because of the tofu the longer it sits.
  • Oven-Baked Option: Bake at 375°F (190°C) for 20-25 minutes, flipping halfway through, for an oil-free version.
  • Air Fryer Option: Air-fry at 375°F (190°C) for 12-15 minutes, flipping once.
  • Add More Protein: Mix in crushed paneer or cooked lentils for a protein boost.
  • Experiment with Flavors: Try adding kasuri methi (dried fenugreek leaves) for an extra punch of flavor.
