Mango salsa can be made with both ripe and unripe mangoes. My recipe uses mangoes, tomatoes, onions, green bell peppers, jalapenos, cilantro and avocados. I like to season this salsa with salt, black pepper, and some oregano, finally finishing it with a generous drizzle of lime juice, because it combines all the flavors.

Mangoes - I recommend using the sweetest Honey/ Ataulfo mangoes. I buy mine from Costco, and let them ripen until the mango skin turns orange. The pulp of the mango is bright orange, and very sweet perfect for this salsa.
Veggies and Fruits - For other veggies, I am using a red onion, tomato, green bell pepper, avocados and jalepenos. You can also use red bell pepper instead of the green bell pepper. Make sure you cut all of your veggies finely.
Herbs - We will use cilantro to add freshness to the recipe.
Lime Juice - Lime juice provides a beautiful zing to the recipe, and compliments the sweetness of the mangoes perfectly.
Spices - We will keep it simple, and only add salt, black pepper powder and dried oregano.
Step - By - Step Recipe
1. I like to start with finely chopping all the veggies and fruits. So finely chop red onion, green bell peppers, tomatoes, jalepenos, avocados, and mangoes.
2. Next finely chop cilantro.
3. Add everything to a mixing bowl.
4. Now drizzle lime juice. And add spices like salt, black pepper powder and dried oregano.
5. Mix well. And chill until ready to serve.

Instructions
- Finely chop mangoes, red onions, tomatoes, avocados, jalapenos, green bell pepper, cilantro.
- Add finely chopped fruits and veggies to a mixing bowl.
- Now add salt, black pepper powder, and dried oregano.
- Squeeze fresh lime juice, you will need about juice of half lime.
- Use a big spoon, to mix the mango salsa.
- Chill it until ready to serve. I like to make it atleast one hour ahead for the flavors to come together.
