The heat is showing no mercy. The sun beams at us all day from every corner of the house. Well, they were the same windows I was excited for when we bought the house. I am not complaining, that sunshine keeps me more active than ever, but I refrain myself to spend long hours in the kitchen. So these days I prefer making some quick, healthy and light meals and more chilled treats. Do you feel like your appetite is sinking in summers? I totally feel like that. These yummy Tostadas happen quite often nowadays for alternating my Lunch and Dinners this summer.
Tostadas are crispy Corn Tortillas which are deep fried, toasted or oven baked. I usually use the organic store bought corn or whole wheat tortillas. It mostly depends on my mood which ones I want to buy. This week I decided to get the Corn Gluten-Free Tostadas and they are so yum. Traditionally tostadas are served with meats like beef and chicken, but I am made the vegetarian version of Tostadas using Refried Beans for Protein and Mini Greens, Cheese, Salsa ,Avocado and Scallions for toppings.
How to Make Tostadas Shells at Home?
Tostadas are very simple to make at home too. All I do is toss the Corn Tortillas or Whole Wheat Tortillas in a preheated oven at 400 F for about 7-8 minutes. These get done pretty quickly and you want to keep an eye on them.
How to Make Tostadas Vegan?
The recipe I used has everything Vegan accept the cheese. I have used 5 cheese Mexican blend but, to make these Tostadas Vegan all you have to do is add no cheese or add vegan sharp cheddar cheese.
How to make Vegetarian Tostadas?
To make Vegetarian Tostadas, you will need Refried Beans, Salad of your Choice- I used mixed mini greens as they are more nutritious then just lettuce, Pica-de-Gallo , Cheese , Scallions and Avocado.
To Make the Refried Beans, I used the canned Pinto Beans. In a Flat Bottom Pan add a tablespoon oil and add finely chopped onions. Add the canned Pinto beans, Taco Seasoning, Garlic Powder and Salt.
To Make Pica De Gallo, You need roughly chop Onions, Tomatoes, Jalapeno , Green Pepper, Cilantro. Place everything in food chopper or processor and get them mixed and finely chopped. Add a squeeze of lime juice and salt when ready to top the tostadas.
The final stage is to serve the Tostadas. Take a Tostada and Spread Refried Beans on top of it. Layer it nicely. Now add your salad on top of it. Top the salad with Pica De Gallo, Cheese, scallions and some chopped avocado. Ta da.. Tostadas are ready! Eat them quick before them become soggy.
Vegetarian Bean Tostadas
Ingredients
For Refried Beans
- 1 tablespoon Oil You can use oil of your choice
- ยฝ Cup Red Onion Finely Chopped
- 15.5 oz Pinto Beans I used the Canned ones.
- 1 teaspoon Taco Seasoning
- 1 teaspoon Garlic Powder
- Salt to Taste
For Pica de Gallo
- 1 + ยฝ Medium Red Onion Roughly Chopped
- 2 Roma Tomatoes Roughly Chopped
- 1 Jalapeno Cut Into Big Chunks
- ยผ Green Pepper Roughly Chopped
- 4 Stems Cilantro
- 2 Tsp Lime Juice
- 1 teaspoon Salt
For Salad
- 2 Cups Mixed Mini Greens Julienned
For Serving with Toppings
- โ Cup 5 Cheese Mexican Blend
- 2 Avocados Chopped
- 1 tablespoon Taco Seasoning For Sprinkling (optional)
Instructions
For Refried Beans
- To Make the Refried Beans, in a Flat Bottom Pan add a tablespoon oil and add finely chopped onions. Add the canned Pinto beans and mash them. Add Taco Seasoning, Garlic Powder and Salt. Cook until all the water is evaporated and the beans are nice and creamy.
For Pica de Gallo
- To Make Pica De Gallo, You need roughly chopped Onions, Tomatoes, Jalapeno , Green Pepper, Cilantro. Place everything in food chopper or processor and get them mixed and finely chopped. Add a squeeze of lime juice and salt when ready to top the tostadas.
For Serving
