Add ghee to a heavy-bottomed frying pan. Next add in the oats, chia seeds, and pumpkin seeds. Roast them until golden and fragrant.
Now add walnuts and roast on medium flame stirring continuously until fragrant.
This should take you about 10 minutes.
Next, add the roasted nuts and seeds to a blender or food processor.
To this, also add cocoa powder, dates, nut butter, and sea salt. Securely close the lid of the food processor.
Now blitz this mix until ground, and starts to come together.
Use a cookie scoop to make equal-sized truffles.
Now fill the cookie scoop tightly with the prepared truffle mix. Scoop out small portions of the truffle mix in your palms.
Roll them into balls using your hands.
Roll each truffle in cocoa powder, chopped walnuts, shredded coconut, or sprinkles for a decorative touch.
