Ingredients

  • 1 Tablespoon Ghee
  • ¾ Cup Gluten- Free Rolled Oats
  • 2 Tablespoons Chia Seeds
  • 2 Tablespoons Pumpkin Seeds
  • 1.5 Cups Walnuts
  • 3 Tablespoons Cocoa Powder
  • ½ Teaspoon Sea Salt
  • Cup Nut Butter
  • 7-8 Medjool Dates

Instructions

  • Add ghee to a heavy-bottomed frying pan. Next add in the oats, chia seeds, and pumpkin seeds. Roast them until golden and fragrant.
  • Now add walnuts and roast on medium flame stirring continuously until fragrant.
  • This should take you about 10 minutes.
  • Next, add the roasted nuts and seeds to a blender or food processor.
  • To this, also add cocoa powder, dates, nut butter, and sea salt. Securely close the lid of the food processor.
  • Now blitz this mix until ground, and starts to come together.
  • Use a cookie scoop to make equal-sized truffles.
  • Now fill the cookie scoop tightly with the prepared truffle mix. Scoop out small portions of the truffle mix in your palms.
  • Roll them into balls using your hands.
  • Roll each truffle in cocoa powder, chopped walnuts, shredded coconut, or sprinkles for a decorative touch.

Notes

Storage: Store truffles in an airtight container in the refrigerator for up to a week or freeze them for a longer shelf life.
Sticky Dates: Use soft Medjool dates for the best texture. If your dates are dry, soak them in warm milk for 10 minutes.
Texture Control: Blend the mixture to your desired consistency—smooth or slightly chunky for added bite.
Customizable: This recipe can be customized to use any nuts and seeds you have on hand, such as almonds, pecans, cashews, sesame seeds, hemp seeds, etc.
