Ingredients

  • 2 Large Japanese Sweet Potatoes Approx 1 Lb of Sweet Potatoes
  • 4 Cups Cold Water To Soak The Cut Potato Sticks to get rid of starches
  • 2 Tablespoon Olive Oil
  • ½ Teaspoon Salt
  • 1 Teaspoon Cornstarch optional, For extra crispy fries
  • 1 Teaspoon Garlic Powder Optional
  • ½ Teaspoon Paprika Optional
  • ¼ Teaspoon Black Pepper Powder Optional
  • Fresh Cilantro or Parsley

Instructions

  • Set your oven to 425°F (220°C). A hot oven is key to achieving crispy fries.
  • Wash the white sweet potatoes.
  • Cut them into evenly sized sticks, about ¼ to ½ inch thick. Uniform sizing ensures even cooking.
  • Place the cut fries in a bowl of cold water and soak for 30 minutes. This step removes excess starch, helping the fries crisp up in the oven.
  • After soaking, drain and pat the fries completely dry with a clean kitchen towel.
  • In a large mixing bowl, toss the dried fries with olive oil, ensuring they are evenly coated.
  • In a separate small bowl, mix the cornstarch, garlic powder, smoked paprika, black pepper, and salt.
  • Sprinkle the seasoning mix over the fries and toss until all pieces are well coated.
  • Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  • Spread the fries in a single layer, ensuring they don’t overlap. Crowding the pan can lead to soggy fries.
  • Place the baking sheet in the preheated oven. Bake them for 40 minutes.
  • Bake for 15 minutes, then flip the fries using a spatula.
  • Bake for an additional 15-20 minutes, or until golden brown and crispy. Keep an eye on them during the last few minutes to prevent burning.
  • Remove the fries from the oven and let them cool slightly.
  • Garnish with fresh parsley or cilantro if desired.
  • Serve with your favorite dipping sauces, such as garlic aioli, spicy mayo, or ketchup.

Notes

Experiment with Flavors: Try different seasonings like chili powder, cumin, or even cinnamon for a sweet twist.
Use Cornstarch: I don't add this when I make it for kids. But, this is the secret to achieving a crispy exterior. A light dusting before baking works wonders.
Don’t Skip the Soak: Soaking removes starch and ensures crispiness.
Space Them Out: Fries need space to crisp up, so use two baking sheets if necessary.
Air Fryer Instructions - Bake the fries at 400 F for 20 -25 minutes giving them a toss at 12 minutes mark. Keep a close eye on the fries so they don't burn.
