What are Fingerling Potatoes?
Fingerling Potatoes are a variety of potatoes. They are small, finger-shaped potatoes that grow naturally this way and mature fully when harvested. These potatoes are the best to make roasted potatoes or any fast food potatoes. Their skin is thin, that doesn't need to be peeled. The skin of these potatoes tastes buttery and nutty, giving them a gorgeous crispy texture when roasted. Hence, if you find fingerling potatoes, you know you need to grab a bag of these for yourself.
Ingredients To Make Herbed Parmesan Fingerling Potatoes
- Olive Oil - I like to use olive oil in this recipe for its fruity nutty flavor. Adding oil to this recipe makes sure to give your potatoes that extra crispy texture. You can also use avocado oil or vegetable oil.
- Butter - Adding butter enhances the taste of these potatoes. Butter makes everything better. If you are vegan, use vegan butter instead.
- Herbs and Spices - I am using Italian Spice, Red Chili Flakes, Garlic Powder, Onion Powder and salt. To make it Indian-ish you can add Achari Masala, Tandoori Masala or Curry Powder. These Spices will definitely take them up a notch.
- Cilantro - Now, if you think cilantro tastes like soap, you and I cannot be friends. I love cilantro and it brings so much freshness and earthy flavor to these roasted potatoes.
- Parmesan Cheese - You want to definitely grate fresh parmesan cheese at home, although storebought grated parmesan works too.
How to Cook These Fingerling Potatoes?
- Prep the Oven and Potatoes - Preheat the oven at 420F (215C). While the oven is preheating, Wash the Fingerling Potatoes thoroughly. Pat them dry a clean using a hand towel. Cut the fingerling potatoes into two halves lengthwise. Next, melt the butter in the microwave or a skillet. Keep it aside. In a bowl, add the oil and melted butter, along with the spices and herbs. Add in your cut fingerling Potatoes. Mix well.
- Bake the Potatoes - Drizzle some oil on the baking tray, and grease it. Place the marinated potatoes flat-side down on the baking tray. Place it in the preheated oven for 30-35 mins. After 25 mins in the oven, take the potatoes out, quickly add the grated parmesan cheese and bake it for another 10 mins. Voila, serve it with Sriracha Mayo or Ranch and you are in for a treat.
How to Store the Fingerling Potatoes?
These Potatoes hold up well in the refrigerator for 3 days. However, I will advise you to freeze them if you are not going to finish the leftovers the next day. Freeze the potatoes once they are completely cool. To reheat these potatoes, place the potatoes on a greased baking tray. Cover them with Aluminum Foil. Bake them in a preheated oven at 400F (200C) for 15 to 20 Mins.

Ingredients
- 1.5 lbs Fingerling Potatoes
- 1 Tbsp Olive Oil
- 1.5 Tbsp Butter
- 2 Tsp Garlic Powder
- 1 Tsp Italian Seasoning
- 1 teaspoon Onion Powder
- 1 Tsp Red Chili Flakes
- ยฝ Tsp Salt
- โ Cup Parmesan Cheese Grated
- 2 Tbsp Cilantro Fresh and Chopped
Instructions
- Preheat the oven at 420F.
- Thouroughly wash and pat dry the fingerling potatoes.Cut them into halves lengthwise.
- Next, melt the butter in the microwave using a microwave safe bowl, or melt the butter on the stove using a small skillet.
- To a mixing bowl, add oil, butter, garlic powder, onion powder, red chili flakes, italian seasoning, salt and 1 tablespoon freshly chopped cilantro. We will use the rest of the freshly chopped cilantro for garnishing.
- Add the cut potatoes to the mixing bowl. Mix until the potatoes are coated well.
- On a baking tray drizzle a little bit of oil. Grease the baking tray.
- Now add the potatoes one by one, flat side facing down. This will give you that beautiful golden crust on the potatoes.
- Brush the remaining marinade from the mixing bowl on the potatoes.
- Bake them for 30-35 mins. At 25 minute mark, take the potatoes out and sprinke the parmesan cheese. Place the potatoes back in the oven. Bake for 10 more minutes.
- Take the Potatoes out of the oven. Use a spatula to take out. Serve in your favorite serving bowl, with a side of ranch or Sriracha Mayo.
