Vegetarian Bean Tostadas

Tostadas are crispy Corn Tortillas which are deep fried, toasted or oven baked. I usually use the organic store bought corn or whole wheat tortillas. It mostly depends on my mood which ones I want to buy. This week I decided to get the Corn Gluten-Free Tostadas and they are so yum. Traditionally tostadas are served with meats like beef and chicken, but I am made the vegetarian version of Tostadas using Refried Beans for Protein and Mini Greens, Cheese, Salsa ,Avocado and Scallions for toppings.

Ingredients

For Refried Beans

  • 1 Tbsp Oil You can use oil of your choice
  • 1/2 Cup Red Onion Finely Chopped
  • 15.5 oz Pinto Beans I used the Canned ones.
  • 1 Tsp Taco Seasoning
  • 1 Tsp Garlic Powder
  • Salt to Taste

For Pica de Gallo

  • 1 + 1/2 Medium Red Onion Roughly Chopped
  • 2 Roma Tomatoes Roughly Chopped
  • 1 Jalapeno Cut Into Big Chunks
  • 1/4 Green Pepper Roughly Chopped
  • 4 Stems Cilantro
  • 2 Tsp Lime Juice
  • 1 Tsp Salt

For Salad

  • 2 Cups Mixed Mini Greens Julienned

For Serving with Toppings

  • 1/3 Cup 5 Cheese Mexican Blend
  • 2 Avocados Chopped
  • 1 Tbsp Taco Seasoning For Sprinkling (optional)

Instructions

For Refried Beans

  • To Make the Refried Beans, in a Flat Bottom Pan add a TBSP oil and add finely chopped onions. Add the canned Pinto beans and mash them. Add Taco Seasoning, Garlic Powder and Salt. Cook until all the water is evaporated and the beans are nice and creamy.

For Pica de Gallo

  • To Make Pica De Gallo, You need roughly chopped Onions, Tomatoes, Jalapeno , Green Pepper, Cilantro. Place everything in food chopper or processor and get them mixed and finely chopped. Add a squeeze of lime juice and salt when ready to top the tostadas.

For Serving

  • The final stage is to assemble the Tostadas. Take a Tostada and Spread Refried Beans on top of it. Layer it nicely. Now add your salad on top of it. Top the salad with Pica De Gallo, Cheese, scallions and some chopped avocado. Ta da.. Tostadas are ready! Eat them quick before them become soggy.
