Best Aam Panna (Raw Mango and Mint Cooler)


Aam Panna is a Raw Mango and Mint Cooler often made with boiled raw mango pulp, fresh mint leaves, cumin powder, sugar/jaggery, and black salt.

Summers weren’t this hot when I first came to California, well I always felt that way because I used to live in San Francisco. Union City is gearing up with heat wave and I am prepping a refreshing drink every day to keep us hydrated. Well, today is the last day of the week to enjoy some summer in the glass while it is going to start raining tomorrow.

The scorching heat from the sun, the roses dancing in my patio, and Luna tranquil in the shade admiring all the nature around her, birds chirping and those butterflies hovering around her. She is growing up now and her hunting instincts are triggering so she tries to chase the birds if you know what I mean. It is such a joy to see her grow but ufff that sun is killing me and I decide to make Aam Panna.

What is Aam Panna?

Aam Panna is a very famous refreshing drink in India. This drink is made with Raw Mangoes, Mint, Black Salt, Cumin and Jaggery. The refreshing drink is made with boiling the raw mangoes. The pulp of the boiled raw mangoes is mixed with Mint Paste with chilled water. It is served chilled and often enjoyed with family and friends on warm evenings.

Make Aam Panna Concentrate

It is very simple to make Aam Panna Concentrate. Take all the pulp out from the boiled raw mangoes. Don’t throw the water away from the boiled mangoes. Blend the pulp in the same water. While the mangoes cool down in a blender jar add fresh mint leaves, cumin, black salt, jaggery, and little water. Now blend this paste in the raw mango pulp and preserve it in the refrigerator in an airtight bottle for 3-4 days or freeze it in the form of ice cubes for up to 3 months.

Step by Step Guide to Make Best Aam Panna

  • Boil the Raw Mangoes in a pressure cooker for about 4-5 whistles or in a microwave for 10-15 minutes on high heat. You can boil the mangoes with the skin or without the skin. I prefer skin as it adds a nice unique taste to it.

  • Make Mint Paste in the meantime. Wash the Mint Leaves and add them to a blender jar. Add Cumin Powder, Jaggery and Black Salt with some water and blend it in a smooth paste.
  • Once the Mangoes are boiled, release the pressure naturally and let the mangoes cool. Take out the skin in another plate and all the pulp nicely in the pressure cooker. Don’t take out the water in which we boiled the mangoes and strain it before adding the mint paste for a smooth blend. We will blend the pulp using the same water.
  • Now in a big blender jar add the pulp and mint paste. If you want to make the concentrate of Aam Panna don’t add water. If you want to make it and drink it add water and blend. Pour it in a jug and chill it in the refrigerator for some time. Serve chilled.

Ingredients

  • 3 Green Raw Mangoes Boiled
  • 1 Cup Mint Leaves If you don't like the taste of mint a lot, you can reduce the quantity of milk to 1/2 cup
  • 1 Cup Jaggery You can also use sugar
  • 2 Tsp Cumin Powder
  • 2 Tsp Black Salt
  • 5-6 Cups Water

Instructions

  • Pressure cook the Raw Mangoes for 4-5 whistles. You can also boil the mangoes in microwave for 12-15 minutes on high heat. You can take out the skin , which makes the whole process very simple. I kept the skin on for a unique taste.
  • Release the pressure naturally. Let the mangoes cool. Don't throw the Water used to boil the Raw Mangoes.
  • Make the Mint Paste. In a Blender Jar, add the fresh mint leaves, Jaggery, cumin powder and black salt. Add a little water and blend it into a paste.
  • Once the mangoes cool, peel the mangoes and take out the pulp. Remove the pulp nicely from the skin and the seed. Add the pulp in the pressure cooker in the same water used to boil the mangoes. Blend it into a smooth paste and strain it.
  • Add the strained puree in a big blender jar with mint paste. To make the concentrate of aam panna don't add any more water. To serve the drink right away add about 5-6 cups of water.
  • Give it a nice blend and taste. Adjust Jaggery and black salt according to your taste.
  • Chill in the refrigerator for sometime and Serve.
